The Plancha phenomenon originates from southern Spain, and if you have been there, you will have seen dishes labelled 'A la Plancha' on menus everywhere. This literally means 'from the griddle'.

Start with lighter blocks and kindling wood. Then you can add logs and, once they are burning well, push them under the edge so that the heat is evenly distributed.

With a steel plate, it is very easy to scrape off all the dirt with a steel spatula. Once your BBQ Plancha has cooled down, do not forget to coat the plate with olive oil. This will prevent rusting!
